Versatile and completely customizable to suit your palate, this Creamy Balsamic Dressing will elevate your salads and veggies to a whole new level of yumminess.
Ingredients

Base Ingredients:
- ½ cup [raw] cashews *
- ¼ cup white balsamic vinegar *
- ¼ cup + 1 teaspoon distilled white vinegar
- ¼ cup water
- 1 Tablespoon pure maple syrup (+/-) *
- 1 teaspoon Dijon mustard (+/-) *
- 2 teaspoons nutritional yeast
Spice/Herb Ingredients:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon sea salt (+/-) *
Other Ingredients:
- ½ teaspoon Italian Seasoning *
Instructions
- Place the cashews into a small bowl, cover with boiling water. Allow to sit for 20 minutes, then drain off the water and discard. Place the soaked cashews into a high-speed blender.
- Place all the remaining Base Ingredients and Spice/Herb Ingredients into the high-speed blender along with the cashews. Blend on high until emulsified and smooth.
- Pulse in the Italian Seasoning do not blend.
- Serve over your favorite salad greens.
