Ingredients
- 1 ¾ cup chopped grape tomatoes (grape tomatoes, quartered)
- ¼ cup + 2 Tablespoons red onion, fine dice
- 1 jalapeno pepper, fine dice
- 3 Tablespoons chopped cilantro
- 1 cup corn
- 1 Tablespoon + 1 teaspoon fresh lime juice
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon sea salt (+/-) *
- Pinch black pepper
Instructions
- Add all the ingredients into a bowl, mix well to combine. Allow to set for 10 minutes to macerate.
- Serve as a topper, appetizer, relish, or side salad.
Notes
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes about 3 cups.
*Storage: Refrigerate and use within 5 days.
