Description

Dive into a bowl of vibrant flavors with this irresistible Asian Peanut Celery Salad, a delightful dish that brings a refreshing crunch to your table!


Ingredients

Salad Base Ingredients:

  • 5 ½ to 6 cups celery, diagonally diced ½ inch pieces (21 to 24 oz.)
  • ½ cup grated carrots
  • ½ to ¾ cup sliced green onions, sliced (approx. 6 to 8)
  • 1 Tablespoon toasted sesame seeds

Dressing Ingredients:

  • 1/3 cup natural peanut butter
  • 2 Tablespoons + 1 teaspoon reduced-sodium tamari *
  • 1 Tablespoon pure maple syrup (+/-) *
  • 1 Tablespoon + 1 teaspoon rice vinegar
  • 1 Tablespoon lime juice
  • 2 teaspoons distilled white vinegar
  • ¼ teaspoon chipotle powder *
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch to ¼ teaspoon sea salt (+/-) *

Optional Ingredients:

  • ½ cup roughly chopped peanuts

Instructions

  1. Place all the Dressing Ingredients into a small bowl, whisk until well combined and emulsified, then place in the refrigerator until ready to use.
  2. Place all the Salad Based Ingredients into a large bowl, mix to evenly distribute the ingredients, then set aside.
  3. Pour the dressing over the salad ingredients, mix well to thoroughly coat all the ingredients. Serve. Refrigerate leftovers.
