Taking tacos to the next level of flavor, festiveness, and fun with these Spicy Moroccan Tacos! Bold and spicy, these aren’t your traditional every day tacos, nope, not at all. These delicious tacos are filled with zesty red onions, spicy jalapeños, sweet red bell peppers, hearty sweet potatoes, bold garlic and ginger, and protein-packed chickpeas, all seasoned with aromatic Moroccan spices! Our Healthy Garlic Sauce is the perfect pairing for these vibrant and tasty tacos. They will have the whole family seated at the table in a flash.

Ingredients
Skillet Ingredients:
- ½ cup red onions, fine dice
- 1 cup red bell peppers, small dice
- ¼ cup jalapeño peppers, seeded, small dice
- 1 cup grated sweet potato
- 1 Tablespoon minced garlic
- 1 teaspoon minced ginger
- 2 Tablespoons tomato paste
- 1 cup tomatoes, seeded, small dice *
- ¼ cup broth
- ½ cup water (or broth)
- 1 Tablespoon reduced sodium tamari *
- 1 heaping Tablespoon golden raisins *
- 4 dried apricots, finely chopped
- 2 – 15 oz. can chickpeas, drained and rinsed
Herb/Spice Ingredients:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 Tablespoon dried minced onion flakes
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon sweet paprika
- 1 teaspoon ground cumin
- Pinch coriander
- 1/8 teaspoon turmeric
- 1/8 teaspoon cinnamon
- ¼ teaspoon cayenne pepper (+/-)
- ½ teaspoon sea salt (+/-) *
- Pinch black pepper
Other Ingredients:
- Taco shells/tortillas
- 1 recipe of Healthy Garlic Sauce
- Chopped cilantro
- Sliced jalapenos
- Finely diced red onions
Healthy Garlic Sauce Ingredients:
- ½ cup unsweetened plain plant yogurt
- 2 teaspoons tahini
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon lemon juice
- ¼ teaspoon sea salt (+/- to taste)
- Pinch of freshly ground pepper (+/- to taste)
Instructions
- Make the Healthy Garlic Sauce. Set aside. *
- Place the Herb/Spice Ingredients in a small bowl, mix and set aside.
- Take one can of the chickpeas, rinse and drain, then mash them, set aside.
- In a large ceramic/enamel-lined large skillet, add the finely diced red onion, red bell pepper, jalapeno pepper, and grated sweet potato; sauté over medium heat until they begin to soften, approximately 7 to 10 minutes. Add a tablespoon or so of water if the veggies start to stick and/or to prevent burning.
- Add the minced garlic, ginger and tomato paste, and sauté for one minute, stirring constantly, add the Herb/Spice mix and sauté, stirring constantly to release their fragrance, about one minute. Then add all the other the remaining Skillet Ingredients (including the mashed and whole chickpeas), bring the mixture to a boil, then immediately lower to a simmer. Stir well to incorporate all the ingredients. Cook uncovered over low heat for 8 minutes, stirring occasionally. The mixture is thick, but not dry.
- Test the flavors, add more spices, if necessary, to achieve the level of flavor you desire. Serve in your favorite taco/tortilla shell topped with the Healthy Garlic Sauce and freshly chopped cilantro, diced red onions, and sliced jalapeño peppers.
Notes
*Tomatoes: We used a cup from a 14.5 oz. can of petite diced tomatoes, drained off the liquid, then measured after the liquid had been drained. Once all the liquid has been drained, you should have one cup of tomatoes from the 14.5 oz. can.
*Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos.
*Healthy Garlic Sauce: Place all the Healthy Garlic Sauce ingredients into a small bowl, mix well and refrigerate.
*Golden Raisins: If you can’t find golden raisins, you can also use regular raisins.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes 12 tacos
*Storage: Refrigerate and use within 5 days.
