Description

Fresh, healthy, and irresistibly crunchy this Oil-Free Crunchy Cabbage Peanut Slaw is brimming with flavor and a total game-changer!


Ingredients

Salad Base Ingredients:

  • 3 cups (6 oz.) thinly sliced purple cabbage
  • 3 ¾ cups (8 oz.) thinly sliced green cabbage
  • 1 cup matchstick carrots
  • 4 to 6 green onions, thinly sliced *
  • ½ cup julienne sliced red bell peppers
  • ¾ cup julienne sliced fresh sugar snap peas (optional)
  • 1/3 cup peanuts

Dressing Ingredients:

  • ¼ cup + 1 Tablespoon peanut butter
  • 3 Tablespoons reduced-sodium tamari*
  • 1 Tablespoon + 1 teaspoon rice vinegar
  • 2 Tablespoons distilled white vinegar
  • 2 Tablespoons pure maple syrup (+/-) *
  • 1 teaspoon lime juice
  • ½ teaspoon molasses *
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ginger powder
  • Pinch to ¼ teaspoon sea salt (+/-) *

Instructions

  1. Place all the Dressing Ingredients into a small bowl, whisk well until smooth and emulsified, set aside.
  2. Place all the Salad Base Ingredients into a large bowl, gently mix to evenly distribute the ingredients.
  3. Pour the dressing over the salad ingredients, mix well to thoroughly coat all the ingredients. Serve immediately and enjoy! Refrigerate leftovers.
