Description

These Healthy Churro Date Bliss Balls are a crave-worthy, cinnamon-kissed power bite bursting with hearty oats and naturally sweet dates.


Ingredients

Base Ingredients:

  • 8 Medjool dates, pitted *
  • 1 ½ cups rolled oats *
  • 2 Tablespoons almond butter *
  • 2 Tablespoons pure maple syrup
  • 1 ¼ teaspoon cinnamon *
  • 1 teaspoon vanilla
  • ¼ teaspoon sea salt *
  • ½ to 1 ½ teaspoons warm tap water *

Rolling Topping Ingredients:

  • 2 Tablespoons dry sugar (of choice)
  • ¼ teaspoon cinnamon


Instructions

  1. Place the Medjool dates into a food processor and process until finely chopped, then place all the remaining Base Ingredients into the food processor. Process until the mixture forms a large ball in the food processor.
  2. Pinch the mixture to ensure the mixture will form a ball. If needed, add extra hot tap water, ½ teaspoon at a time and process. Retest by pinching the mixture.
  3. Scoop up 1 tablespoon (or a small cookie scoop) of the mixture, roll and firmly press into a firm ball and set on a plate. Repeat until all the mixture has been rolled into smooth, firm balls.
  4. Place all the Rolling Topping Ingredients into a small bowl, whisk to combine, then roll the balls until completely coated in the topping. Set on a plate and place in the refrigerator for 30 minutes to firm up.
  5. Once firm, move to an air-tight container, then store them in the refrigerator. They also freeze well.

Sea Salt:  Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Servings:  Makes 19 to 21 balls.
