Description

These Easy Smashed Falafel Tacos are a crave-worthy celebration of Middle Eastern flavors, brilliantly combining flavorful falafel with soft tortillas for a taco-night fusion experience you’ll crave again and again.

Base Ingredients:

  • 2 – [ 15.25 oz. cans ] chickpeas, drained, rinsed
  • ½ cup packed fresh parsley, stems removed
  • ½ cup packed fresh cilantro, stems removed
  • 2 Tablespoons tahini
  • 1 Tablespoon nutritional yeast
  • 1 Tablespoon lemon juice
  • 1 Tablespoon water (+/-)

Spice/Herb Ingredients:

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin (+/-) *
  • ½ teaspoon ground coriander (+/-) *
  • Pinch to 1 teaspoon sea salt (+/-) *
  • Pinch cayenne pepper (+/-) *

Instructions

  1. Place all the Base Ingredients and Spice/Herb Ingredients into a food processor and process until thoroughly mixed and the chickpeas are broken down into a paste-like mixture. Do not over process. 
  2. Take a flour tortilla and lay it on a flat surface. Scoop up 1/4 cup to 1/3 cup (largely dependent upon the size of tortilla used) of the falafel mixture and form a smooth ball, then lay it onto on half of the flour tortilla and press the mixture to the edges of half of the tortilla, then fold over in half, slightly press together to seal. Repeat until all the tortillas are filled and folded.
  3. Place a large skillet onto the stove over medium heat, then lay several of the folded tortillas down onto the hot skillet. Heat until the tortillas are golden brown and the inside filling is hot (approx. 3 to 4 minutes), then gently flip over to the other side. Heat until the other side is golden brown (approx. 2 to 3 minutes). Remove and place on a plate. Continue until all the folded tortillas have been browned in the skillet on both sides.
  4. To serve, eat plain or stuffed with chopped tomatoes and garlic sauce. Add some pickled turnips for the adventurous!
